Bhelpuri is a popular Indian snack made of chickpeas and potatoes. It is relatively light and healthy – and sold on street corners all over India and on the beaches of Mumbai. Here is Farah's quick and easy version:

Ingredients

  • 2 cans of chickpeas
  • 2 potatoes – boiled, peeled and cut into small cubes.
  • 1 bunch of coriander
  • 1 medium-sized red onion cut into tiny pieces (optional)
  • 1 packet of Shan brand Chat Masala Mix
  • 2 packets of Bhel mix
  • 2 Lemons
  • 1 bottle of Tamarind sauce
  • 1 bottle of corriander chutney
  • ½ tsp of red chili powder

In a glass bowl, mix drained chickpeas and drained potatoes. Add chat masala, about three-quarters of the coriander, lemon juice (save ½ of one lemon for later) and red chili powder.

Add Bhel mix on top just before serving (very important or it will get soggy if you add ahead of time)

Decorate with the rest of the coriander and lemon (thinly sliced). Sprinkle some red chili powder on top.

Drizzle the Chutneys on top of individual servings to taste and add onions if desired.
