Jade Lock-Whitmore, a CP24 producer, is a big fan of his Whipped Shortbread. Here is the recipe.

Ingredients

    • 1 cup butter
    • ¼ cup corn starch
    • ½ cup icing sugar
    • 1 ½ cups all purpose flour

Instructions

Preheat oven to 325 C. Soften butter. Start whipping it with a hand or stand mixer. Add the other ingredients and continue beating on high for 10 minutes (yes, that long – but take a break if your hand mixer starts over heating). Drop teaspoons of the mixture onto a baking sheet lined with parchment paper. Put onto middle rack of oven and bake for 10 minutes until it's barely golden – should still be very pale in colour. Cool and dust with icing sugar.
