Directions
Cut up any type of fruit you like. For my tropical fruit salad, I've included: strawberries, mango and blueberries
Tip: To brighten up fruit that may not be in peak season, like strawberries -- add lemon juice and a light dusting of sugar
Grilled pineapple
Ingredients
- Pineapple cut into spears
- 1 tablespoon of butter
- 1 tablespoon cinnamon
- ½ cup brown sugar
- Juice of half a lemon
Directions:
Sprinkle pineapple with some of the cinnamon and sugar so that the pineapple caramelizes when you grill it
Heat up the rest of the ingredients, make sure they're melted and blended
Grill pineapple a couple minutes each side and brush with melted glaze
If you don't have a grill, you could do this on the stovetop with a grill pan, or in the oven under the broiler
Enjoy while it's still warm!
