CP24.com's Senior News Writer Sandie Benitah is a bit obsessed with chocolate so to make up for it, she decided to make her regular chocolate-chip pancake recipe a little healthier using tips from the Paleo Diet.

Ingredients

  • 1 Cup unsweetened apple sauce
  • 1 Cup all natural peanut butter (Almond butter is also recommended by Paleo dieticians)
  • 5 Eggs
  • 1 tablespoon Vanilla
  • 1 tablespoon cinnamon
  • 1 Cup of semi-sweet chocolate chips

Instructions

Preheat non-stick pan at medium-high heat.

Mix all the ingredients into a bowl until smooth. Be careful, the chocolate chips will sink to the bottom so make sure you mix thoroughtly.

With a large serving spoon, grab a bit of the mixture and delicately place it on the pan. The amount of mixture should make a small round spot on the pan. (If it's too thick, it will take much longer to bake.)

Once you see the mixture become less runny and notice small bubbles, flip the pancake over for another minute or so.

Transfer to a plate and voila!

Mixture should make about 15 small-sized pancakes.
